The Olde Bryan Inn’s bar has recently acquired a Coravin, allowing us the ability to serve special featured wines typically unavailable by the glass! By inserting the hollow needle of the Coravin through the cork and pressurizing the bottle with argon gas, any amount of wine can be poured without compromising the entire bottle. To celebrate our new availability, Olde Bryan Inn will be officially offering Orin Swift Cellars brand wine.

Orin Swift Cellars established roots in 1995 by David Swift Phinney, who, upon travelling to Italy with a friend, fell in love with wine and everything to do with it. He studied winemaking and eventually landed a position at Robert Mondavi Winery.

The work was hard, and Phinney made the decision that if he was going to work this hard he would rather be his own boss. Officially founding Orin Swift Cellars in 1998 with two tons of zinfandel, he went on to create a variety of rare and unique wines. By combining his father’s middle name, Orin, and his mother’s maiden name, Swift, Phinney thus dubbed the brand he would go on to spend the next decade growing.

The wine varieties Olde Bryan Inn will debut with our Coravin:

MANNEQUIN
A balanced California Chardonnay(90.6%), blended with a bit of Sauvignon Blanc (5.8%) and Muscat  (3.6%), sourced from the Sonoma Coast and Atlas Peak AVAs.
Bursting aromatics of honeydew, honeysuckle & ripe peach, are complemented by a hint of jasmine, pineapple & cream. With lots of weight & viscosity the full-bodied palate brims with ripe stone fruit. The fleshy, golden mid-palate evolves into a pointed, textured finish that closes with lot of minerality.

PALERMO
With low yields, small berries, and lots of concentration, the array of fruit sourced for this Napa Valley Cabernet Sauvignon, was high in quality and packed with sensorial complexity; this wine is a quintessential Napa Cab.
Deep and luring aromas of raspberry & ripe cherry are intermingled with accents of star anise, five spice, and freshly steeped black tea. The entry is smooth with a combination of cassis and blackberry with a satiating suppleness. Ultraround and soft, the wine finishes with reverberating length.
